Here this is again, for those of you wanting the recipe. I published it over a year ago.....but thought it was too yummy not to post again......
We are all about warm, cozy suppers in the winter. We love Mexican food and this is one of our very favorites.
2# ground chuck
1 lg. onion, chopped
2 - 1 oz. pkg. ranch dressing mix
2 - 1.25 oz. pkg. taco seasoning mix
2 - 11 oz. cans white, shoe peg corn
2 c. water
1 - 16 oz. can pinto beans
1 - 14.5 oz. can petite diced tomatoes
1 - 16 oz. can black beans
1 - 16 oz. can kidney beans
1 - 10 oz. can Ro-Tel
Cook ground chuck with onion. Drain off grease. Add all ingredients in a large crock-pot. DO NOT drain liquids off of canned items. Cook on low for 4 hours. Top individual servings with sour cream and shredded cheese. Tostitos Scoops are wonderful with this as well.
ENJOY!!!

Thanks Ellie! Your tortilla soup sounds yummy too!
Blessings!
This soup sounds so good, and perfect for the cold weather that is heading our way.
Looks good, Marva!
I'm making Irish spinach & poato soup for dinner tonight. I'll try your recipe this weekend. Lately I have been loving soup!
Thanks. I think I even have everything in the pantry for this one. Will have to add it to the list. Maybe later in the week.
Oh, this sounds yummy! Im going to have to try it. The twins love soup.
Thanks again for the recipe. It was a hit at my house on Saturday and so easy.
Thank you for the recipe, we canned some Mexican Ro-tel type sauce last week and have all the ingredients except shoe peg corn, but I suspect it tastes like corn so will sub either fresh or canned for it. We canned chili sauce yesterday (wonder why it is called chili sauce, hardly any in there) and I be it would be good to have on the side to maybe add as a mix in on the soup, with sour cream and cilantro. Thank you, again.
