Homemade Gumbo

I am trying my hand at homemade gumbo. Here is the recipe!






As Served By: LuLu's, Gulf Shores

Ingredients

  • 3 pounds medium shrimp, heads on
  • 2 pounds claw crab meat, picked for shells
  • 4 crab bodies, if available
  • 4 large ripe tomatoes, peeled and chopped, or 1 (28-ounce) can whole tomatoes, coarsely chopped in their own juice
  • 2 large onions, coarsely chopped
  • 2 green bell peppers, coarsely chopped
  • 1 medium head celery, coarsely chopped including leaves
  • 2 ½ pounds okra, fresh if available, cut in 1/4 –inch pieces, or frozen cut okra, thawed
  • ¾ cup vegetable oil or bacon grease
  • 1 cup all-purpose flour
  • 8 cups shrimp or seafood stock, heated
  • 2 to 3 teaspoons salt, or to taste
  • 1 tablespoon black pepper
  • ¼ teaspoon cayenne pepper
  • 2tablespoons dried thyme
  • 4 bay leaves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 tablespoons LuLu’s Crazy Creola Seasoning
  • 2 to 3 tablespoons LuLu’s Perfect Pepper Hot Sauce
  • 2 tablespoons Worcestershire sauce
  • 2 cups green onions, finely chopped
  • ½ cup fresh parsley, finely chopped
  • ½ cup freshly squeezed lemon juice
  • Ingredients

    De-head, peel, and devein shrimp. Reserve heads and shells for later use. Pick through crabmeat carefully for shells. Refrigerate shrimp and crab until ready for use.
    Fill a medium-sized saucepan with water. Bring to a boil. Drop tomatoes carefully into boiling water and cook for 1 minute. Remove with a slotted spoon and let cool. Skins will slip off easily. Remove cores and coarsely chop tomatoes over a bowl to retain as much juice as possible. Set aside. (If using canned tomatoes, I cut them up in eights.)
    Place chopped onions, bell peppers, celery, and okra in separate bowls. Set aside.
    To make the roux, heat vegetable oil or bacon grease in a 10-quart heavy stockpot over medium-high heat. When oil is hot, gradually add flour, whisking continuously. Continue to whisk roux , adjusting heat as necessary to keep from burning. This may take 25-35 minutes or until your arm feels like it is about to fall off and the roux is a dark mahogany color. Be careful; if the roux burns, you will have to start all over again!
    Carefully add chopped onions to roux and continue stirring with a large wooden spoon for 2 to 3 minutes. Onions will sizzle and steam when they hit the hot roux so caution is advised. Seasoned gumbo cooks have roux battle scars on one or both arms.
    Add bell peppers and continue stirring for another 2 to 3 minutes; add celery continue to stir constantly for another 2 to 3 minutes. The mixture should now resemble a pot of black beans.
    Add tomatoes and stir well.
    Slowly add the heated stock.
    Add salt, black pepper, cayenne pepper, thyme, bay leaves, oregano, basil, Creole seasoning, hot sauce, and Worcestershire sauce. Stir well. Bring gumbo to a boil and continue boiling for 5 minutes. Reduce heat to maintain a slow simmer, uncovered, for about 1 hour.
    Add okra and bring back to a boil for 5 minutes. Reduce heat again to maintain a slow simmer, uncovered, for 30 minutes or a day (until okra has lost its bright green color and is cooked down like the other vegetables). If gumbo gets too thick, add a little water. If too thin, continue to simmer uncovered.
    At this point, you can cool the gumbo. It’s always better the day after it has been cooked, although I’ve never had a complaint when I served gumbo the day I made it. Remove from heat and let it sit for about 30 minutes. Then place pot, uncovered, in an empty sink. Fill the sink with water and ice around the stockpot. Stir gumbo every 15 minutes to move the liquid to facilitate cooling. Gumbo will spoil if cooled improperly. When completely cool, refrigerate it, uncovered, for a couple of hours before placing it in an airtight container.
    Reheat gumbo slowly to simmering. Thirty minutes before serving, add green onions, parsley, and lemon juice. Cover and cook for 15 minutes. Add shrimp and crabmeat. Mix well. Cover and turn off heat. Let sit for at least another 15 minutes while seafood cooks. It will stay hot for a long time. Adjust seasonings and serve over cooked white rice with French bread and butter.

    Strawberry Pie & Pics

    My Mom and I took the boys to pick strawberries yesterday! We had a good time the boys were great helpers! Her are some pics below! I also am putting up the recipe for my strawberry pie (aka Shoney's Strawberry Pie). This recipe make 2 pies. Hope you enjoy!

    PIE
    1 1/2 c sugar
    1 1/2 c boiling water
    4 level Tbsp. cornstarch
    1-3oz. box strawberry jello
    2 cooked, cooled pie shells
    2 cartons fresh strawberries, washed and sliced

    Mix sugar and cornstarch well; add boiling water to mixture. Dissolve well and cook on medium heat until mixture becomesclear looking and thick. Add jello. Cool. (Sit opt in ice water in sink). When cool, add strawberries. Pour into pie sheels and refrigerate. Can serve with whipped cream. Yield: 2 pies.

    Candied Pork Chops

    I make these a good bit and they are always a hit!

    6 pork chops
    3-4 apples, sliced with cored removed (I also peel mine)
    Brown sugar
    1 stick of butter

    Heat oven to 350*. In bottom of 13x9 baking dish place apples. Sprinkle apples generously with brown sugar. Dot with thin pats of butter. Lay pork chops over apples. Bake at 350 for 30 minutes; remove from oven and baste with juice from apples and brown sugar. Return to oven and bake 30 minutes longer.

    Serve while warm. I like green beans and chicken rice a roni (sounds strange but it delish together!).

    Baby Back Ribs From the Oven

    I made these last week and they were soooo good! I served them with potato salad, baked beans and corn on the cob. We had apple cobbler from fresh apples for dessert and sweet tea to drink. Yum! The recipe came from cdkitchen.com. I adjusted it to my taste. Here is my version:

    6# baby back ribs (they had them on sale for $1.95# at the Piggly Wiggly last week)

    1/2 c. apple cider vinegar

    1/2 c. brown sugar

    bbq sauce (I used Sweet Baby Ray's)


    Preheat oven to 350 degrees.

    Cut ribs into individual serving pieces (I will do this next time!)

    Toss with vinegar. Sprinkle with brown sugar.

    Place in foil and wrap tightly.

    Place in roasting pan with 1/2 inch water. Make sure you have that in there at all times.

    Place in preheated oven and bake for 1 1/2 hours.

    Remove from oven and drain off water.

    Unwrap ribs and place in roaster.

    Pour sauce over ribs top and bottom. Completely cover with sauce.

    Return to oven and bake for 30 more minutes. Just until the edges are darkening but not charred.
    Note**** the one piece in the picture with no sauce is for Mason. He doesn't eat "condiments".

    Remove from oven and enjoy warm!

    Out of This World Guacamole

    Everyone on the web has been talking about guacamole lately and I decided to try my hand at it. I really like it and wanted to make some homemade. So here is my recipe:

    2 large avocados, seeded, peeled and scooped out
    I mashed them well, I don't like mine chunky

    Then I added the following:
    1/4 t. kosher salt
    1/16 t. garlic powder
    a dash of cayenne (ground) pepper
    2 T. lime juice
    1 1/2 T. chopped fresh cilantro
    1 lg. Tomato finely chopped
    1/2 lg. onion, finely chopped

    I mixed all together and chilled for a little while........so yummy!

    You can adjust any of the ingredients to your own tastes.

    I am a cook not a baker. I love to cook........not to bake cookies. I do basic ones. I do bake several dozen around Christmas....but I want something special for this swap. We are doing a cookie swap in our small group next weekend. Do you have any ideas? I don't want anything too simple.......nor too complicated.

    Fried Apple Pie Day

    A couple of weeks ago I made fried apple pies. They were so yummy and by the time I shared all of the three dozen with friends and relatives there were none left. Needless to say there have since been several requests for another fried apple pie day........

    Wednesday's Cooking Marathon

    Last Wednesday I knew I had a lot to do. We were having mexican night at home with chicken burritos, cheese dip and chips and all american peach cobbler. For everyone else (my parents, uncle, aunt and father-in-law) I made Sweet Spanish cornbread, squash casserole, butterbeans, fried okra, potato salad and peach cobbler.

    I had it all made and delivered by 2pm yesterday. I was so glad that it was over and done with. My parents really enjoyed it and we did too.

    Lazy Man's Peach Cobbler

    I love cobbler, especially peach, wonder why?! LOL! I make the quick kind. My Mom and her Mom always made this and i guess I picked it up from them. You can use any kind of berry or fruit you wish. You can also substitute canned peaches for fresh or fresh frozen ones. I always use ones from my freezer unless we are gathering fresh ones.

    1 stick butter
    1 c milk
    1 c baking mix
    1 c sugar
    3-4 cups of fruit, sweetened (don't drain off all of the juice.....I leave about half of the juice)

    Melt butter in a 13x9 baking dish on 350*. Mix sugar and baking mix together: stir in milk until moistened. Pour over melted butter. DO NOT stir. Then pour peaches and juice over the batter. The batter will rise to the top as it cooks and make a delicious crust. Bake for 45 minutes in 350* oven. Enjoy!!!!

    Philly Cheesesteak Casserole

    Deb and Alexis asked for this recipe.........
    This was one of those happen upon recipes......in a crunch! I hope you enjoy it as much as my family does.

    1# ground chuck
    1 med. onion, finely chopped
    1 sm. green bell pepper, finely chopped
    1 box hamburger helper (Philly cheese steak)
    6 slices swiss cheese

    Brown ground chuck with onion and pepper and drain grease off. Prepare hamburger helper from directions on box (using ground chuck mixture).

    Put in a 13x9 baking dish, cover with slices of swiss cheese. Top with french fried onions (from helper box) and bake on 300* until cheese is melted.

    I serve this with green beans and cream corn. ENJOY!!!

    Cake Mix Cookies

    I love this recipe. It seems I always have cake mixes in the pantry and it is SO easy! You can use any kind of cake mix. My favorites are chocolate and lemon.

    1 - 18.25 oz. cake mix
    2 eggs
    1/2 c. veg.oil
    Preheat oven to 350*. Mix the three above ingredients (you DO NOT need ANYTHING else), in a large bowl until blended. Drop by spoonfuls about two inches apart onto a baking sheet (I spray mine with nonstick spray). Bake on the middle rack for 8-10 minutes. Cool and start sampling!

    Santa Fe Soup

    Here this is again, for those of you wanting the recipe. I published it over a year ago.....but thought it was too yummy not to post again......

    We are all about warm, cozy suppers in the winter. We love Mexican food and this is one of our very favorites.

    2# ground chuck
    1 lg. onion, chopped
    2 - 1 oz. pkg. ranch dressing mix
    2 - 1.25 oz. pkg. taco seasoning mix
    2 - 11 oz. cans white, shoe peg corn
    2 c. water
    1 - 16 oz. can pinto beans
    1 - 14.5 oz. can petite diced tomatoes
    1 - 16 oz. can black beans
    1 - 16 oz. can kidney beans
    1 - 10 oz. can Ro-Tel

    Cook ground chuck with onion. Drain off grease. Add all ingredients in a large crock-pot. DO NOT drain liquids off of canned items. Cook on low for 4 hours. Top individual servings with sour cream and shredded cheese. Tostitos Scoops are wonderful with this as well.

    Jim N Nick's Cheese Biscuits

    Mimi asked me to share this recipe. The story behind these is they are from a bbq place named Jim and Nick's. We ate there several weeks ago and it was very good but very pricey, at least for us. They served these little muffins (but they are called biscuits) before the meal. They were so good. I looked for a copycat recipe but ended up getting my computer eat up with a virus. Then in our city newspaper 2 weeks ago this recipe was printed. This is the recipe to the "t". They are sweet yet oh so good! I hope you like it. We eat ours with chili and bbq mainly.

    4 T butter (no substitutes), melted
    1 1/2 c. all purpose flour
    2 1/2 t baking powder
    1 c sugar
    3/4 c milk
    1 egg
    1/4 t vanilla
    1 c shredded cheddar cheese

    Mix all ingredients together and pour into greased mini-muffin tins. Bake at 400* for 20 minutes.

    Menu Weekly Challenge

    This evening I went to have my hair done and was not home. Hubby was super late getting home last night and did not want supper, just a hot shower and to sleep. That left enough leftovers for the boys and the mother's helper tonight. So I guess I kind of cheated?

    Anyhow, she drank water= free
    The boys had milk = $.75

    hubby is working late again. I grabbed Zaxby's $5.77

    So that was well under $6.52 for all of us.

    Menu Monday Weekly Challenge


    Today is the first day of the challenge over at Ellie's. I am keeping meal, dessert and drinks under$5 for 5 people. The 5th person (our Mother's helper, KK) will be over a lot this week, getting ready for the party this weekend.
    Here is what is on the menu:
