Answers to Questions Left in Comments

A couple of you left questions for me in the comments on a few post, so here goes.

Mykidsmom asked, "just how many jars of canned goods do you have?"
these are estimated, the bottom of the linen closet in the second bath has most of the beans and field peas in it.
Green Beans over 300 quarts
Field Peas (pink eyed) 70 pints
Tomatoes 15 quarts
Then there is various types of salsa, soups, relishes, jams, jellies, butters, applesauce, juices, pie filling, taco and bbq sauces, as well as other items. Somewhere in the ballpark of 1000 jars of this.

Stephanie asked,"Marva, what are you planning on doing with your console tv?"
Well, I am ashamed to say, but it is going to the dump. We have asked everyone about a recycling center or someone that would take it for free and no luck. We are replacing it with a larger up to date model. The console went out about 3 years ago.

Mrs. Darling asked, "How do you have peaches to can now or are these frozen from last year?" They are frozen from last year. We lost all of ours last year, but had friends south of us that let us have their culls (second grade).

Marva......don't feel too bad about the console tv.....my parents had one about 4 to 5 years ago and they couldn't give it away.....nobody wanted it, even for free! Ellie

I want to get some PEPH peas and corn when it is fresh to put up. I am not going to try to grow it in my tiny garden this year. We have always frozen them. We milk the corn cobs. How does the taste of the canned relate to frozen? I am scared to have everything in the freezer and also only have my inside freezer and the outside one is a side by side refrige also so I don't have a lot of freezer space. Um, Um PEPH peas, corn with the cream in a skillet, fried okra, butterbeans and some good ol skillet cornbread. What could be better?

We always freeze our corn. I do can my PEPH peas and green beans though. I think they are better! just my opinion. Hubby is sitting here......he says definately canned.

i freeze my okra too.....taste just like fresh. If you want the recipe I can post it, just let me know.

Why do you can 300 quarts of beans? When I was growing up we had 11 in our family and we cannd 400 for a family of 11. Do you eat 300 quarts a year? Thats almost a jar a day. For my family of four I can about 40 quarts a year. Im very curious as to why all the green beans! Or is this for more then a year?

I guess that same question goes for the thousand jars of salsa and such. Am I missing something? LOL Is this all for you and your hubby and two toddlers?

I can and freeze about 500 quarts of stuff a year for our family of four. So what am I not getting here? :)

Yes, tell me how to can the PEPH and green beans. We have frozen corn and okra so I know how to do those. I bought a canner at a garage sale. It is a water bath, not a pressure cooker. I am trying to learn and start putting up food for the year. It is going to be a feat with my big family. I hope to add a few garden beds next year- but know I need to start smaller this year. I have an area near my deck that we removed a dead shrub so it is about 4X4 and I am going to plant lettuces there and maybe some onion and herbs. I want to save as much of my raised bed space as I can.
