Ole Farm Breakfast Casserole

We love this casserole for supper. Served with fresh fruit and toast. i also try to add a slice of tomato and each piece of casserole. Yum!

3 c. frozen hash browns
1 c. shredded monterey jack cheese
1 c. diced ham
1/4 c. finely chopped onion
4 beaten eggs
12 oz. skim milk
1/8 t. salt
1/4 t. ground mustard

Grease baking dish (I use a 2 quart).
Arrange potatoes evenly in the bottom of dish.
Sprinkle with cheese, ham and onion.
In a separate bowl, combine eggs, milk, salt and mustard.
Pour over potato mixture.
Bake uncovered in 350* oven for 40-45 minutes. Let stand 5 minutes before cutting.

NOTE**********You can put in fridge overnight. You will need to cook an extra 10 minutes or so that way though.

ENJOY!!!
