Spicy Southwestern Chicken Sandwiches

1/3 c. mayo (I use light)
2 T. fresh chopped cilantro
1 1/2 t. grated lime rind
1 1/2 T. fresh lime juice
1 Jalapeno, seeded and minced
4 skinless, boneless, chicken breast halves
1-2 T. fajita seasoning
1 T. veg. oil
4 hamburger buns
1 tomato, sliced
4 slices of purple onion

Combine first 5 ingredients in a small bowl; stir well and set aside.
Place chicken between two sheets of plastic wrap; flatten to 1/4 inch thickness, with a meat mallet.
Sprinkle chicken with fajita seasoning. Cook chicken in a large skillet with beg. oil, over med-high heat (about 4 minutes on each side).
Spread 1 tablespoon of mayo mixture evenly on bottom half of each bun.
Top with chicken, tomato, onion and 1 more tablespoon of mayo mixture. Add top of bun.

Yields four servings. I like to serve this with baked nachos.

ENJOY!!!
