A friend shared this recipe with me several years ago. Thank you Carla! This has become a favorite at our home. I serve this with tossed salad, refried beans and spanish rice.
1 # ground beef, browned and drained
1 med. onion chopped
1- 4.5oz. can of chili peppers, drained
Salt, pepper and cumin to taste
1 can cream of chicken soup
1 soup can of milk
1 pkg. tortillas
2 c. Mexican blend shredded cheese
1 can Ro-Tel (I use mild)
Gucamole. chopped black olives and sour cream
Add peppers, seasoning and onions to ground beef. Cover and simmer. Add milk and soup. Bring to a boil. In a casserole dish, make a layer of tortillas, layer of cheese, then soup mixture. Repeat until all of soup mixture is used. Sprinkle with cheese. Place dush on large cookie sheet (to catch any overflow). Bake at 350 for 30 minutes. Garnish with guacamole, Ro-Tel, sour cream and olives.
